Preparing the Chestnut Flour Cookie Dough
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg yolk and vanilla extract until well combined.
- In a separate bowl, whisk together the chestnut flour and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
Shaping and Baking the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop out rounded tablespoons of cookie dough and roll into balls. Aim for uniformly sized balls to ensure even baking.
- Arrange the dough balls on the prepared baking sheet, leaving some space between them.
- Using your thumb or the back of a teaspoon, make a well in the center of each cookie.
- Fill each well with about a teaspoon of your favorite jam.
Achieving Golden Perfection
- Bake for 12-15 minutes, or until the edges of the cookies are golden brown and the jam is slightly bubbly.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Chill dough for less crumbly cookies. Don’t overfill thumbprints. Look for golden edges.
