  • 1 cup red bell pepper chopped
  • 1 cup green bell pepper chopped
  • 2 cloves garlic
  • 2 14.5 oz petite diced tomatoes
  • 1 15 oz tomato sauce
  • 1 14.5 oz low-sodium beef broth
  • 2.5 Tbsp chopped fresh parsley
  • 0.5 tsp dried basil
  • 0.5 tsp dried oregano
  • 1 cup uncooked long grain white or brown rice
  • 1 cup cheddar or mozzarella cheese optional, for serving

Method
