  • 2 mangoes peeled and diced
  • 0.5 cup cilantro fresh, chopped
  • 0.5 cup red onion diced
  • 1 clove garlic minced
  • 2 tbsp lime juice fresh
  • 2 teaspoons lime zest
  • 1 tbsp extra virgin olive oil

  • 4 filets salmon about 6 ounces each

Prepare the Mango Salsa
  1. In a bowl, combine the diced mangoes, chopped cilantro, diced red onion, minced garlic, lime juice, lime zest, and diced serrano chilies. Mix well.
  2. Let it sit at room temperature while you prepare the salmon.
Cook the Salmon
  1. Heat the olive oil in a pan over medium-high heat.
  2. Season the salmon filets with salt and pepper.
  3. Place the salmon in the hot pan, skin-side down if applicable, and cook for 3-4 minutes until the skin is crispy and the fish is partially cooked through.
  4. Flip the salmon and cook for another 2-3 minutes, or until the salmon is cooked through.
