Prepare the Marinade
- In a mixing bowl, combine lemon pepper seasoning, white pepper, Creole seasoning, blackened seasoning, and lemon juice. Whisk well.
Marinate the Catfish
- Place the catfish fillets in a shallow dish. Pour the marinade over the fillets, ensuring they are well coated. Marinate for at least 30 minutes, or ideally 2-4 hours in the refrigerator.
Grill the Catfish
- Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.
- Remove the catfish fillets from the marinade. Grill for 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
Serve
- Remove the catfish from the grill and let it rest for a few minutes. Serve immediately with lemon wedges and your favorite Cajun side dishes.

For extra flavor, consider marinating the catfish overnight. Don't overcook the fish; it's best when it's still moist.
