Method
 

Prepare the Marinade
  1. In a mixing bowl, combine lemon pepper seasoning, white pepper, Creole seasoning, blackened seasoning, and lemon juice. Whisk well.
Marinate the Catfish
  1. Place the catfish fillets in a shallow dish. Pour the marinade over the fillets, ensuring they are well coated. Marinate for at least 30 minutes, or ideally 2-4 hours in the refrigerator.
Grill the Catfish
  1. Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.
  2. Remove the catfish fillets from the marinade. Grill for 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
