Method
 

Step 1: Preparing the Ingredients
  1. Preheat the oven to 400°F (200°C).
  2. Cut the pumpkin into 1-inch cubes and toss with olive oil, salt, and pepper.
  3. Spread the pumpkin on a baking sheet lined with foil and roast for 20-25 minutes, until tender and lightly browned.
  4. While the pumpkin is roasting, dice the onion, mince the garlic, and finely chop the jalapeño.
Step 2: Cooking the Main Components
  1. In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and jalapeño, cooking until softened (about 5 minutes).
  2. Stir in the cumin, chili powder, and salt. Add the black beans and cook for another 2-3 minutes.
  3. Remove from heat and set aside.
Step 3: Assembling the Dish
  1. Spread a layer of tortilla chips on a baking sheet lined with foil.
  2. Top with half of the roasted pumpkin, followed by half of the black bean mixture.
  3. Sprinkle with half of the shredded cheese.
  4. Repeat with another layer of chips, pumpkin, black beans, and cheese.
Step 4: Baking or Final Cooking Touches
  1. Bake for 10-15 minutes, until the cheese is melted and bubbly, and the chips are golden brown.
  2. Let the nachos cool for a few minutes before adding your favorite toppings.

Notes

Don't overcrowd the baking sheet to ensure even cooking. Keep an eye on the nachos to prevent burning. Let the nachos cool slightly before serving to allow the cheese to set.
