- Preheat oven to 400°F (200°C).
- Trim the ends of the cambray onions, leaving the roots intact.
- In a large bowl, combine olive oil, balsamic vinegar, honey, salt, and pepper.
- Add the cambray onions to the bowl and toss to coat evenly.
- Spread the onions in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and caramelized, shaking the pan halfway through.
- Serve immediately.
Notes
For a richer flavor, use a combination of olive oil and melted butter. Add a sprig of fresh thyme or rosemary during the last 10 minutes of roasting for an herbaceous touch. Sprinkle with flaky sea salt just before serving to enhance the sweetness.
