  • 1 tsp Baking soda
  • 0.5 tsp Salt
Wet Ingredients
  • 1 cup Pumpkin puree
  • 0.75 cups Granulated sugar
  • 0.5 cup Brown sugar
  • 0.5 cup Unsalted butter, melted
  • 2 Eggs
  • 2 tsp Vanilla extract
Spices & Add-ins
  • 2 tsp Pumpkin pie spice
  • 2 cups Chocolate chips

Method
 

Step 1: Preparing the Ingredients
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract until well combined.
Step 2: Combining Ingredients
  1. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  2. Fold in chocolate chips and any additional mix-ins.
Step 3: Shaping the Cookies
  1. Using a cookie scoop or spoon, drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
Step 4: Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Avoid overbaking; cookies may still look soft in the center but will firm up as they cool.
