Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground ginger
Wet Ingredients
  • 1 cup vegetable oil
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 0.5 cup sour cream

Equipment

  • 9x13 inch baking pan
  • Mixing Bowls
  • Whisk
  • Spatula
  • Cooling rack

Method

Step 1: Preparing the Ingredients
  1. Preheat your oven to 350°F (180°C) and line a 9x13 inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Step 2: Combining Wet Ingredients
  1. In another bowl, whisk together eggs, vegetable oil, pumpkin puree, and vanilla extract.
  2. Add the wet ingredients to the dry ingredients and mix until just combined.
  3. Fold in the sour cream until evenly distributed.
Step 3: Baking the Bars
  1. Pour the batter into the prepared pan and smooth the top with a spatula.
  2. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bars to cool completely in the pan before slicing.

Notes

Don't overmix the batter to prevent tough bars. Be patient and let the bars cool completely before slicing to maintain their structure. For clean slices, use a sharp knife and wipe it clean between cuts.
