Prepare the Dough
- In a large mixing bowl, combine all the dough ingredients and mix until well combined.
- Form the dough into a ball and wrap it in plastic wrap. Refrigerate for at least 1 hour or up to 24 hours.
Prepare the Filling
- Spread the peach jam evenly on a small plate or bowl.
- If using, add a pinch of cardamom, nutmeg, and cloves to the jam and mix well.
Assemble and Bake the Cookies
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
- Using a 2-inch cookie cutter, cut out the dough into circles and place them on the prepared baking sheet.
- Using the back of a spoon or your finger, gently press the jam onto the center of each cookie, leaving a border.
- Bake the cookies for 10-12 minutes, or until lightly golden around the edges.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store the cookies in an airtight container at room temperature for up to 1 week.
