Ingredients
  

Dough
  • 1.25 cups whole-wheat pastry flour
  • 1 tsp baking powder
  • 0.5 cup organic sugar
  • 3 tbsp light oil such as sunflower
  • 0.25 cp fruit juice either apple or orange
  • 1 tsp vanilla
  • 0.125 tsp salt
Filling
  • about 3/4 cp peach jam*
  • a pinch of cardamom, nutmeg & cloves, optional

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine all the dough ingredients and mix until well combined.
  2. Form the dough into a ball and wrap it in plastic wrap. Refrigerate for at least 1 hour or up to 24 hours.
Prepare the Filling
  1. Spread the peach jam evenly on a small plate or bowl.
  2. If using, add a pinch of cardamom, nutmeg, and cloves to the jam and mix well.
Assemble and Bake the Cookies
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
  3. Using a 2-inch cookie cutter, cut out the dough into circles and place them on the prepared baking sheet.
  4. Using the back of a spoon or your finger, gently press the jam onto the center of each cookie, leaving a border.
  5. Bake the cookies for 10-12 minutes, or until lightly golden around the edges.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store the cookies in an airtight container at room temperature for up to 1 week.
