Method
Step 1: Preparing the Ingredients
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unroll the thawed puff pastry and roll it out to about 0.125-inch thickness.
- Cut the brie into 12 even slices, then cut each slice in half lengthwise to create 24 'mummy' pieces.
Step 2: Assembling the Dish
- Place the pastry on a lightly floured surface and cut it into 24 equal squares (or use a cookie cutter for mini mummies).
- Place a brie slice at the base of each pastry square, then brush the edges with egg wash.
- Fold the pastry over the brie, pressing the edges to seal. You should have a small, sealed package with a brie 'mummy' inside.
- Place the assembled mummies on the prepared baking sheet, seam side down.
Step 3: Adding the Mummy Details
- Cut black olive slices in half to create 'eyes' for your mummies.
- Using a sharp knife, make small cuts in the pastry to create the mummy's wrapping.
- Place an olive slice on each mummy for the eyes.
Step 4: Baking and Final Touches
- Brush the tops of the mummies with egg wash and sprinkle with chopped thyme.
- Bake for 15-20 minutes, or until the pastry is golden brown and the brie is melted and gooey.
- Remove from the oven and let them cool for a few minutes before serving.
Notes
Store leftover Mummy Brie Bites in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (180°C) for 5-7 minutes or until warmed through.
