Pastry & Cheese
  • 1 sheet Frozen puff pastry (17.3 oz) Thawed
  • 1 wheel Brie cheese (8 oz) Rind removed
Flavor & Garnish
  • 1 tbsp Dijon mustard Optional
  • 12 each Black olives Sliced
  • 1 tbsp Fresh thyme Chopped

Method
 

Step 1: Preparing the Ingredients
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unroll the thawed puff pastry and roll it out to about 0.125-inch thickness.
  3. Cut the brie into 12 even slices, then cut each slice in half lengthwise to create 24 'mummy' pieces.
Step 2: Assembling the Dish
  1. Place the pastry on a lightly floured surface and cut it into 24 equal squares (or use a cookie cutter for mini mummies).
  2. Place a brie slice at the base of each pastry square, then brush the edges with egg wash.
  3. Fold the pastry over the brie, pressing the edges to seal. You should have a small, sealed package with a brie 'mummy' inside.
  4. Place the assembled mummies on the prepared baking sheet, seam side down.
Step 3: Adding the Mummy Details
  1. Cut black olive slices in half to create 'eyes' for your mummies.
  2. Using a sharp knife, make small cuts in the pastry to create the mummy's wrapping.
  3. Place an olive slice on each mummy for the eyes.
Step 4: Baking and Final Touches
  1. Brush the tops of the mummies with egg wash and sprinkle with chopped thyme.
  2. Bake for 15-20 minutes, or until the pastry is golden brown and the brie is melted and gooey.
  3. Remove from the oven and let them cool for a few minutes before serving.

Notes

Store leftover Mummy Brie Bites in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (180°C) for 5-7 minutes or until warmed through.
