- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the coquina squash, olive oil, salt, and pepper. Toss to coat.
- Spread the squash in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until tender and slightly browned.
- Serve immediately.
Notes
For extra flavor, try adding a sprig of thyme or rosemary to the baking sheet during roasting. Sprinkle with grated Parmesan cheese during the last few minutes of cooking for a cheesy twist. Roasted coquina squash can be stored in the refrigerator for up to 3 days.
