  • 2 large ripe mangoes finely chopped
  • 1 large red pepper deseeded and finely chopped
  • 1 large cucumber finely chopped
  • 1 jalapeno deseeded and finely chopped
  • 1 handful fresh cilantro leaves finely chopped
  • 1 handful fresh mint leaves finely chopped
  • 2 tablespoon fresh lime juice
  • 0.5 teaspoon red chilli powder
  • salt and pepper to taste

Method
 

Instructions
  1. Dice the mangoes, red pepper, cucumber, jalapeno, cilantro and mint leaves.
  2. Combine all ingredients in a bowl.
  3. Add lime juice, red chilli powder and salt and pepper to taste.
  4. Gently mix and let it sit for at least 15 minutes to allow flavors to meld.

Notes

Use ripe but firm mangoes for the best texture and flavor. Adjust the amount of jalapeno based on your spice preference. For extra sweetness, add honey or agave.
