  • 4 large sweet potatoes about 2 1/2 pounds, cut in half lengthwise
  • cooking oil
  • 2 tablespoons butter
  • 1 cup yellow onion finely diced, about 1 medium onion
  • 0.5 cup celery finely diced, about 2 celery stalks
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 0.75 teaspoon ground ginger
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 cups chicken or vegetable stock
  • 14 ounces canned coconut milk
  • additional salt and black pepper to taste

Method
 

Instructions
  1. Heat butter and oil in a large pot over medium heat. Add onion, celery, and garlic, then cook until softened.
  2. Stir in oregano, ginger, cumin, salt, and pepper. Add sweet potatoes and stock, then bring to a boil.
  3. Reduce heat, cover, and let simmer until sweet potatoes are tender (about 30 minutes).
  4. Use an immersion blender to blend the soup until smooth. Stir in coconut milk and adjust seasoning if needed.
  5. Serve hot and enjoy your healthy creamy sweet potato soup!

Notes

For a spicy version, add diced jalapeƱo or harissa. For extra creaminess, blend the soup further or add coconut cream.
