  • 2.5 lb extra large shrimp peeled and deveined
  • 1 lemon zest and juice of
  • 3 cloves garlic peeled and chopped
  • 0.25 cup olive oil
  • 1 tsp kosher salt
  • 0.25 tsp ground black pepper
  • 0.25 tsp crushed red pepper flakes optional

  • Sea salt chopped parsley, and lemon wedges, for serving

Method
 

Preparation
  1. In a bowl, combine shrimp, lemon zest, lemon juice, garlic, olive oil, kosher salt, black pepper, and crushed red pepper flakes (if using).
  2. Marinate the shrimp for 30 minutes to 1 hour in the refrigerator.
  3. If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Thread the shrimp onto the skewers, leaving a little space between each shrimp.
  3. Oil the grill grates to prevent sticking.
  4. Grill the shrimp skewers for 2-3 minutes per side, until the shrimp turns pink and opaque.
  5. Be careful not to overcook the shrimp.
Serving
  1. Remove the shrimp skewers from the grill and sprinkle with sea salt and chopped parsley.
  2. Serve immediately with lemon wedges and your favorite sides, such as rice, quinoa, grilled vegetables, or salad.

Notes

Experiment with different marinades and veggie combinations. Pat the shrimp dry before marinating for better browning. Add a squeeze of fresh lemon juice after grilling for extra brightness.
