Cookie Dough
- In a saucepan, melt the butter over medium heat. Cook until butter begins to brown.
- In a large bowl, combine brown sugar, flour, salt, and baking soda.
- Add the browned butter to the dry ingredients and mix well.
- Beat in the egg and vanilla extract.
- Chill the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop chilled dough onto prepared sheets. Bake for 10-12 minutes or until edges are golden brown.
Cream Cheese Frosting
- In a large bowl, beat butter and cream cheese until fluffy.
- Gradually add powdered sugar, beating until light and fluffy.
- Stir in vanilla extract.
Assembly
- Let cookies cool completely.
- Spread frosting on each cookie, then stack them in pairs.
- Refrigerate stacked cookies for at least 2 hours before serving.

For extra flavor, let stacked cookies marinate in the refrigerator overnight.
