Cookie Dough
  • 1 cup unsalted butter
  • 2 cups brown sugar
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 large egg
  • 2 tsp vanilla extract
Cream Cheese Frosting
  • 1 cup unsalted butter
  • 1 pkg cream cheese
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

Cookie Dough
  1. In a saucepan, melt the butter over medium heat. Cook until butter begins to brown.
  2. In a large bowl, combine brown sugar, flour, salt, and baking soda.
  3. Add the browned butter to the dry ingredients and mix well.
  4. Beat in the egg and vanilla extract.
  5. Chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop chilled dough onto prepared sheets. Bake for 10-12 minutes or until edges are golden brown.
Cream Cheese Frosting
  1. In a large bowl, beat butter and cream cheese until fluffy.
  2. Gradually add powdered sugar, beating until light and fluffy.
  3. Stir in vanilla extract.
Assembly
  1. Let cookies cool completely.
  2. Spread frosting on each cookie, then stack them in pairs.
  3. Refrigerate stacked cookies for at least 2 hours before serving.
