  • 2 medium apples such as Honeycrisp or Granny Smith, peeled, cored, and diced
  • 4 ounces goat cheese softened
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 1 egg yolk beaten with 1 tablespoon water, for egg wash

Equipment

  • Baking Sheet
  • Parchment paper
  • Sharp Knife
  • Mixing Bowls
  • Pastry brush

Method

Method
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the diced apples, brown sugar, cinnamon, and nutmeg. Toss until the apples are evenly coated.
  3. Gently unfold the thawed puff pastry sheet on a lightly floured surface.
  4. Cut the pastry sheet into squares.
  5. Spread a thin layer of softened goat cheese onto half of each pastry square, leaving a small border.
  6. Top the goat cheese with a spoonful of the cinnamon-spiced apple mixture.
  7. Fold the pastry squares in half, enclosing the filling. Crimp the edges with a fork to seal.
  8. Brush the tops of the turnovers with the egg wash.
  9. Place the turnovers on the prepared baking sheet and bake for 15-20 minutes, or until puffed and golden brown.

Notes

For a crispier bottom, sprinkle the pastry with breadcrumbs before adding the filling. Don't overfill the turnovers. Allow the turnovers to cool slightly before serving.
