  • 12 pieces large eggs
  • 0.5 cup mayonnaise
  • 2 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste
  • Paprika for garnish

Method
 

  1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10-12 minutes.
  2. Drain hot water and immediately transfer eggs to an ice bath. Let cool completely.
  3. Peel eggs and cut in half lengthwise. Gently scoop out the yolks and place in a mixing bowl.
  4. Mash yolks with a fork or potato masher until smooth.
  5. Add mayonnaise, mustard, vinegar, salt, and pepper. Mix well until combined.
  6. Spoon or pipe filling into egg white halves.
  7. Sprinkle with paprika and chill for at least 30 minutes before serving.

Notes

For extra creamy filling, press the yolk mixture through a fine-mesh sieve. Get creative with garnishes! Try smoked paprika, everything bagel seasoning, or fresh herbs.
