Ingredients
  

Pasta
  • 14 ounces chitarrini or spaghetti or any pasta of your choice
Tuna
  • 7 ounces canned tuna fillet or normal canned tuna
Cheese
  • 2 ounces Parmigiano cheese grated
Garlic
  • 2 cloves garlic peeled
Eggs
  • 2 eggs
Seasoning
  • salt for pasta water and to taste
  • ground black pepper to taste
Garnish (optional)
  • fresh parsley chopped (optional)
Olive Oil
  • 2 tablespoons extra virgin olive oil

Method
 

Get Started
  1. Cook pasta al dente. Bring a large pot of salted water to a boil, add the pasta and cook according to package directions until al dente.
Prepare the Tuna
  1. Drain the canned tuna and flake it with a fork. If using fresh tuna, sear it in a pan or flake it.
Make the Carbonara Sauce
  1. Whisk the eggs, grated Parmigiano cheese, and black pepper in a mixing bowl. Set aside.
Sauté the Garlic
  1. Heat the olive oil in a frying pan over medium heat. Add the minced garlic and sauté for about a minute, until fragrant, but do not brown.
Combine and Serve
  1. Add the cooked pasta to the pan with the garlic and olive oil.
  2. Pour the egg mixture over the pasta and toss quickly to coat, the heat from the pasta will cook the eggs. Add a little pasta water to adjust the sauce if needed.
  3. Add the tuna and toss gently to combine.
