Get Started
- Cook pasta al dente. Bring a large pot of salted water to a boil, add the pasta and cook according to package directions until al dente.
Prepare the Tuna
- Drain the canned tuna and flake it with a fork. If using fresh tuna, sear it in a pan or flake it.
Make the Carbonara Sauce
- Whisk the eggs, grated Parmigiano cheese, and black pepper in a mixing bowl. Set aside.
Sauté the Garlic
- Heat the olive oil in a frying pan over medium heat. Add the minced garlic and sauté for about a minute, until fragrant, but do not brown.
Combine and Serve
- Add the cooked pasta to the pan with the garlic and olive oil.
- Pour the egg mixture over the pasta and toss quickly to coat, the heat from the pasta will cook the eggs. Add a little pasta water to adjust the sauce if needed.
- Add the tuna and toss gently to combine.
- Season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley if desired.
Notes
Serve with a side salad or crusty bread. Consider a crisp white wine like Pinot Grigio.
