Step 1: Preparing the Ingredients
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine all the dry ingredients (oats, baking powder, salt, and any optional add-ins).
Step 2: Mixing the Dough
- In another bowl, mix the wet ingredients (pumpkin and maple syrup or honey).
- Add the wet ingredients to the dry ingredients and stir until just combined. The dough will be thick and slightly sticky.
Step 3: Shaping the Cookies
- Using a cookie scoop or spoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten the tops with the back of a spoon or your fingers.
Step 4: Baking
- Bake for 12-14 minutes, or until the edges are golden brown and the tops are set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, use a combination of rolled oats and quick-cooking oats. Add a pinch of espresso powder to enhance the chocolate flavor in chocolate chip variations. Avoid overmixing the dough to maintain a chewy texture. For even baking, use a baking stone or inverted baking sheet.
