  • 0.5 tsp Salt
Wet ingredients
  • 1 cup Canned pumpkin Not pumpkin pie filling
  • 0.5 cup Maple syrup or honey

Method
 

Step 1: Preparing the Ingredients
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine all the dry ingredients (oats, baking powder, salt, and any optional add-ins).
Step 2: Mixing the Dough
  1. In another bowl, mix the wet ingredients (pumpkin and maple syrup or honey).
  2. Add the wet ingredients to the dry ingredients and stir until just combined. The dough will be thick and slightly sticky.
Step 3: Shaping the Cookies
  1. Using a cookie scoop or spoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Gently flatten the tops with the back of a spoon or your fingers.
Step 4: Baking
  1. Bake for 12-14 minutes, or until the edges are golden brown and the tops are set.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra chewiness, use a combination of rolled oats and quick-cooking oats. Add a pinch of espresso powder to enhance the chocolate flavor in chocolate chip variations. Avoid overmixing the dough to maintain a chewy texture. For even baking, use a baking stone or inverted baking sheet.
