Prepare the Marinade
- In a mixing bowl, combine minced garlic, chopped chipotle peppers in adobo sauce, lemon juice, olive oil, paprika, cilantro (if using), salt, pepper, red pepper flakes, and cayenne pepper.
- Whisk the ingredients together until well combined.
Marinate the Shrimp
- Add the shrimp to the marinade and toss to coat evenly.
- Marinate for at least 30 minutes in the refrigerator, or longer for deeper flavor.
Grill the Shrimp
- Preheat your grill to medium-high heat (around 400°F/200°C).
- If using skewers, thread the marinated shrimp onto the skewers.
- Place the shrimp directly on the grill grates or grill basket.
- Grill for 2-4 minutes per side, or until the shrimp is pink and cooked through. The exact grilling time will depend on the size of the shrimp. Smaller shrimp will cook faster.
Serve and Enjoy
- Remove the shrimp from the grill and serve immediately.
- Serve the shrimp with your favorite sides and toppings, like rice, beans, salsa, guacamole and cilantro.
Notes
For Honey Chipotle Grilled Shrimp, increase the honey in the marinade. For Creamy Chipotle Shrimp, drizzle with a sauce made with sour cream, Greek yogurt, or avocado.
