  • 1 tbsp olive oil
  • 2 cloves garlic finely minced
  • 2 cans low-sodium chicken broth 14.5 oz each
  • 1 can diced green chilies 7 oz
  • 1.5 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp ground coriander
  • 0.25 tsp cayenne pepper
  • salt and freshly ground black pepper to taste
  • 1 pkg Neufchatel cheese 8 oz, cut into small cubes
  • 1.25 cup corn frozen or fresh
  • 2 cans cannellini beans 15 oz each
  • 2.5 cups shredded cooked chicken rotisserie or left-over
  • 1 tbsp lime juice fresh
  • 2 tbsp cilantro chopped fresh, plus more for serving

Method
 

Instructions
  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  2. Stir in chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper, salt, and black pepper. Bring to a boil.
  3. Reduce heat, cover, and let simmer for 20 minutes.
  4. Add Neufchatel cheese, corn, cannellini beans, and chicken. Stir well to combine.
  5. Cover and simmer for an additional 20-30 minutes, stirring occasionally.
  6. Stir in lime juice and cilantro. Taste and adjust seasoning if needed.
  7. Serve hot, topped with additional cilantro and your choice of tortilla chips, monterrey jack cheese, or sliced avocado (optional).

Notes

For a healthier version, use low-sodium chicken broth and Neufchatel cheese. You can also add more vegetables like bell peppers or zucchini.
