- In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
- Stir in chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper, salt, and black pepper. Bring to a boil.
- Reduce heat, cover, and let simmer for 20 minutes.
- Add Neufchatel cheese, corn, cannellini beans, and chicken. Stir well to combine.
- Cover and simmer for an additional 20-30 minutes, stirring occasionally.
- Stir in lime juice and cilantro. Taste and adjust seasoning if needed.
- Serve hot, topped with additional cilantro and your choice of tortilla chips, monterrey jack cheese, or sliced avocado (optional).
Notes
For a healthier version, use low-sodium chicken broth and Neufchatel cheese. You can also add more vegetables like bell peppers or zucchini.
