  • 0.25 cup Molasses
  • 1 Egg

Method
 

Step 1: Preparing the Ingredients
  1. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in molasses, egg, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Fold in crystallized ginger (if using).
  6. Cover the bowl and chill the dough for at least 1 hour.
Step 2: Shaping the Cookies
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Place granulated sugar in a small bowl.
  3. Using a cookie scoop or spoon, form dough balls (about 1.5 tbsp each) and roll them in the sugar to coat.
  4. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart.
Step 3: Baking the Cookies
  1. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  2. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a cooling rack.

Notes
