- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, pepper, garlic powder, and nutmeg.
- In another bowl, mix milk, eggs, and pumpkin puree until well combined.
- Gradually add dry ingredients to wet ingredients, mixing just until combined.
- Fold in shredded cheese.
- Transfer dough to a piping bag and pipe 1.5-inch rounds onto the prepared baking sheet, spacing them about 1 inch apart.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Allow puffs to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra crispiness, brush the puffs with a little beaten egg before baking. For a softer interior, underbake slightly.
