Ingredients
  

Dough
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp nutmeg
  • 1 cup milk
  • 2 eggs
  • 1 cup pumpkin puree
  • 1 cup shredded cheese

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, pepper, garlic powder, and nutmeg.
  3. In another bowl, mix milk, eggs, and pumpkin puree until well combined.
  4. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  5. Fold in shredded cheese.
  6. Transfer dough to a piping bag and pipe 1.5-inch rounds onto the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake for 20-25 minutes, or until golden brown and crispy.
  8. Allow puffs to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra crispiness, brush the puffs with a little beaten egg before baking. For a softer interior, underbake slightly.
